Shiitake Mushroom Bacon


I have tried several varieties of bacon substitutes, including TVP bacon bits, rice paper bacon and coconut bacon. This shiitake recipe is my favorite. I could eat the whole batch right off of the parchment paper (and may have, once or twice, done just that).

Ingredients

3 cups of shiitake mushrooms, sliced into ¼-inch strips

3 TBS olive oil
1 tsp liquid smoke
2 tsp sesame oil
1 tsp maple syrup
1 tsp salt

1. In a medium bowl, mix all ingredients, except the mushrooms, together. There doesn't seem to be much there, but it will coat the mushrooms just fine. Toss the mushrooms in, stir them around, then allow to marinate 1 hour to overnight. Give it a stir now and then, when you are passing by.

2. Preheat oven to 350° F.

3. Spread the mushrooms out on a parchment-lined baking sheet. Try to keep them form overlapping. (Shiitakes need their elbow room.)

4. Bake for 30-45 minutes, stirring every 10 minutes or so. Keep a close eye on them near the end so they don't all burn. (Carbon has its place, but that place should not be on your sandwich.)
