1 TBS olive or canola oil
1 medium onion, peeled and chopped
1 28oz can crushed tomatoes
2 15oz cans kidney beans (or 1 kidney, 1 pinto), drained and rinsed.
1 cup frozen corn
1 TBS chili powder
1/2 tsp. sugar
salt to taste
Saute the onion in the oil. You can, if you desire, also add minced garlic, 1 chopped red pepper, and/or 1/2 cup diced carrots. Cook for a few minutes until the
onion (and other vegetables if added) are softened.
Add the remaining ingredients and cook until warmed through. Top with chopped, roasted cashews or pine nuts.
