- Yield: Two pizzas
- 2 TBS yeast
- 2 TBS sugar
- 1/4 cup oil (olive oil is a good choice)
- 2 cups warm water
- 2 cups whole wheat flour
- 4 cups unbleached white flour
- 1 tsp. salt
- 1 jar red sauce (we used Costco's marinara).
- 2 bags Dayia mozzarella-style cheese
- 1/4 cup (or so) corn meal
- 1-2 cans black olives (optional)
Directions
- Whisk together:
- Yeast (2 TBS)
- Sugar (2 TBS)
- Oil (1/4 cup)
- Water (2 cups)
- Allow this mixture to become active (foamy).
- Whisk in:
- Salt (1 tsp)
- Whole wheat flour (2 cups)
- Mix in the white flour (4 cups).
- Knead for 5-10 minutes.
- Let this rise until doubled (about an hour).
- Knead the dough for about 5 minutes.
- Divide the dough into two parts.
- If using a pizza stone, place the stone in the oven (it needs to be hot before the pizza is placed on it).
- Turn oven on at 425o.
- Roll the dough into a funny shape (if round is "funny") or a shape to fit your pan or stone.
- If using a stone, place the dough on a tray (like a cookie sheet) which has been generously dusted with corn meal.
- If not using a pizza stone, place the dough on the pan you'll be using to bake the pizza.
- Spread the red sauce on the pizzas.
- Sprinkle one bag of Dayia cheese on each pizza.
- Add additional toppings (like black olives) as desired.
- Let pizza dough rise, fully dressed, until the oven is ready.
- If using a stone, transfer the pizza from the tray to the stone (it should slide right over if the corn meal was applied properly).
- If not using a stone, place the pan in the oven when the oven is up to temperature.
- Bake only one pizza at a time.
- Bake for 12 minutes (or so). The pizza is done when the bottom of the dough is golden brown.
- Remove from oven, slice and serve.
