Ingredients
1 1/2 cups gluten-free flour*
1 tsp baking powder
6 TBS dairy-free milk (we use almond)
1 cup natural peanut butter (crunchy or smooth)
2/3 cup brown sugar
2 tsp vanilla extract
1. Preheat oven to 350. In a medium bowl, mix flour(s) with baking powder.
2. Dump remaining ingredients into the flour mixture and stir until combined. The dough should be somewhat dry and easily roll-able into balls.
3. Using about a tablespoon or two of dough, roll into balls and place on parchment paper covered baking sheet. Do the fork criss-cross thing.
4. Bake for 16-18 minutes or until just starting to brown.
*Note about flour: I use a mix of whatever we have on-hand: almond, brown rice, etc. Depending on what flour you use, the dough may need a little more liquid or a little more flour. It should have the consistency of brand-new play dough.
