Black-Bean Sloppy Joes

Vegan and Gluten-Free

Good side dishes include corn or coleslaw.

Ingredients: 

¼ Cup of olive oil

1 Medium onion (chop it into bits)

1 Green bell pepper (treat it like you treated the onion)

4 16-ounce cans of black beans (drain, but there is no need to rinse the beans)

2 Tbsp. Vinegar

2 Tbsp. Sugar (regular ol' white granulated sugar)

1 tsp. dried oregano

1 tsp. dried basil

1 Quart of home-canned tomatoes (or roughly the equivalent from the store)

Preparation

1.    Pour the tomatoes (1 quart) into a blender and blend until the lumps are gone.

2.    Sauté the bits of onion and green pepper in the ¼-cup of olive oil until the onions are soft and translucent.

3.     Put the tomatoes, the sautéed vegetables, and all other ingredients into a sauce pan.

4.    Simmer on low heat until the liquid is reduced. How much to reduce it is largely determined by how thick you like your sloppy joes. For us, it usually reduces for30-45 minutes. At this point, when you stir it, it should remind you of medium to thick chili (and it will get thicker as it cools). 

5.     Serve over thick slices of Dad Bread, rice, or anything else that goes with black beans.
