Vegan, Gluten-Free, Peanut-Butter, Oatmeal, Chocolate-Chip Cookies

This recipe is for a single batch. You may want to double it.

 Toss the empty cookie sheet into the oven and start the oven. Set it at 350° F.

1                 1                          Cream the following:

o   1 Teaspoon of Salt

o   1 Cup Brown Sugar

o   1 Cup White Sugar

o   ½ Cup Peanut Butter

o   ⅓ Cup Light Oil (like canola)

2              Add the following and mix until smooth:

o   2 Teaspoons of Vanilla Extract

o   1 Teaspoon of Almond Extract

o   ⅓ Cup of Almond (or other non-dairy) milk

3              Add (sifting if necessary to remove lumps)

o   2½ Cups of Almond Flour

o   1 Teaspoon of Baking Soda

o   1 Teaspoon of Baking Powder

o   1 Teaspoon of Psyllium Husks (or Psyllium Powder)

o   1 Teaspoon of Xanthan Gum

4.            Add and mix by hand:

o   2½ Cups of Almond Flour

o   2 Cups of Chocolate Chips

Bake on parchment paper at 350° F for 15 minutes. Make sure that both the oven and the cookie sheet are at full temperature before starting the baking process.
