ChristmasTruffles

Serving Suggestions
Use for special occasions only.  These are a little too good to have around very often.  When you make them, share them (4800 truffle calories are not really what you need right now).

Ingredients
  • 1 Pack of Oreo-type sandwich cookies, either regular or mint flavor.
  • 1 8-ounce package/container of vegan cream cheese
  • 16 ounces (two boxes/16 cubes) of semi-sweet baking chocolate

Directions
  1. Place the cookies and cream cheese in a food processor, and show no mercy.
  2. When you have a sort of grainy paste, place the mixture in a refrigerator for about an hour. (The food processor should have been turned off by now.)
  3. Near the end of the paste's cooling-off period, place the chocolate cubes in a double boiler (the top half) and melt them.
  4. When the chocolate is ready, and the grainy paste is firm, remove the grainy paste from the fridge and use it to form (roughly) one-inch orbs.  As each orb is formed, toss it into the chocolate for your kitchen accomplice, who will use two matching forks to roll each orb until covered with chocolate and then remove the orb from the choco-vat.
  5. Place the chocolate-draped orbs on waxed paper, leaving each with a little elbow room.
  6. When all the orbs are on the paper, refrigerate the whole lot of them (remember they like it cool).  Let them cool for about an hour.  Then, I wish you luck as you try to keep yourself from overindulging.
