Spicy Black Bean Soup

Brett:  This is very good.  It is thick enough to be called a stew (so it is better than soup).

Ingredients
  • 1 package Trader Joe's Chorizo or other faux link or sausage
  • 1 large onion (chopped)
  • 2 ribs of celery (chopped) -optional
  • 2 cloves of garlic (minced)-optional
  • 1 small red bell pepper (chopped -- about half a cup)-optional
  • 1-2 carrots (chopped)
  • 1 boullion cube
  • 3 15-ounce cans of black beans (drained and rinsed) or 4-5 cups dried then cooked
  • 1 25-ounce can of roasted diced tomatoes with juice
  • 1/4 tsp dried-leaf thyme
  • smoked paprika and chili powder to tast (1/2 to 1 tsp each)
  • 1/2 package frozen corn (1-2 cups)
  • 1/4 tsp pepper
  • 2 cups water or to taste

Directions
  1. Saute onions and other vegetables.
  2. Saute links.
  3. Add all other ingredients and cook til carrots are soft.
  4. Adjust liquid and spices
